This September, Evanston Township High School in Illinois encouraged students and administrators alike to increase both their physical fitness and fruit and veggie consumption through a week-long “Move & Crunch Challenge.” Made possible by a wonderful collaboration between the PE, Applied Sciences and Nutrition Services departments, the event put the spotlight on healthy choices and exposed students to new tastes and flavors.
Guest chefs were on site each day to demonstrate and sample delicious recipes featuring fruits and vegetables, from apples and green beans to zucchini and butternut squash. Move & Crunch challenged students to include the fruit or vegetable in their meal during lunch, participate in 30-60 minutes of physical activity every day, and track their fruit/vegetable intake and physical activity in a classroom log.
Many teachers volunteered their lunch hour to assist the chefs, and administrators were encouraged to participate in at least one student PE class and join students in the cafeteria for a healthy school lunch.
ETHS encourages healthy eating beyond Move & Crunch Week with a number of innovations including vending machines with Kosher, Organic and All Natural products, school garden vegetables incorporated into daily student menus, and student taste tests on cafeteria offerings conducted once a month.

Wow! How great it is that you could get high schoolers involved in these activities?! I especially love the idea of administrators participating in PE class. This is a fantastic example of the whole school community working together towards wellness goals. Love it!
